    Japanese Eggplant Casserole

    I tried out this recipe tonight, with some homegrown Japanese Eggplant and yellow squash. I had to do some substitutions to the recipe, used Cheddar Cheese instead of Monterrey Jack, and I didn't have thyme, so I used Italian seasoning instead. I also used a whole can of petite tomatoes, and nixed the tomato sauce...didn't see a need to open another tomato product for this. I had more than the eggplant shells could hold, it really looks like a casserole, and smells delicious!

    After cooking, it looked and tastes delicious...with the exception of the egg plant skin at the bottom of the casserole dish. I would put this in Bell peppers, and leave off putting it in the eggplant skin...the skin is tough.

    Overall, I would say that this recipe is a winner! Even people who don't like eggplant would love this Wink
